Now, lots of recipes out there call themselves quick, simple, or easy… but I am here to say that THIS pineapple popsicles recipe, is seriously easy! You just chop up some pineapple (or buy it pre-cut – it’s up to you how lazy you want to be) and mix it with two other ingredients.
As with most new recipes that I try these days, this one comes from the latest Waitrose magazine. Seriously, I love this thing. So if you happen to have a giant pineapple ripening on your counter, and need something to do with it – why not try this?
Oh, and as for my popsicle mould? Let me just take a moment to sing its praises…
I first was introduced to this popsicle mould by the blog Oh Happy Day – I kept seeing these great looking popsicle recipes, and had to find out which one they were using. It’s well made, and makes 10 popsicles at a time, which is a more than many of the little dinky ones you can buy out there. Not only that, but because it uses popsicle sticks, you can make a batch, and then take them out and bag them or something, and make more! I like not having to wait to wash the sticks. And yes, I have actually used little clear treat bags to make a stock pile of popsicles in the freezer.
Of course, these also happen to look super professional and classic – which I love.
So if your weather is looking beautiful, or even if it’s not, try these pineapple popsicles on for size! I’m now thinking of ways to take this recipe, and use different fruit/juices to make other flavours! The options are endless, if only summer was too!

Ingredients
- 200g diced, fresh pineapple
- 3 tbsp sweetened condensed milk
- 300ml pineapple juice
Instructions
- Cut the fresh, ripe pineapple into 1cm chunks. Divide the amount between 8-10 popsicles, depending on the size of your mould.
- Whisk together the pineapple juice and condensed milk. Pour it into the moulds.
- Insert your sticks and freeze the mixture.
- Enjoy!
